Hello, my organization has some money to spend and we are thinking about buying a graphing software. We want one that would be relatively easy to use for low to medium stats savvy users, that makes graphs easy to customize, and one that would produce publication quality graphs. Do people have any favorites they could recommend?

Have used GraphPad Prism for years (www.graphpad.com). Have published graphs from this program without issue.

I second GraphPad. Very flexible and user friendly.
