You can change level by clicking on a cell in the Measure column in the data
editor or by syntax:

VARIABLE LEVEL <yourvarlist> (scale) .

Statistics uses a variety of heuristic rules to assign an initial measurement level when the data source does not contain this.  They can never be perfect, but they are often right.  It's always up to the user, though, as the final authority.

It depends on your settings.  This can happen if variables are read in as
numeric, but have fewer than a certain number of values.  You can change
your default settings from the data editor by:

Edit > Options > Data


. . and changing the value in the Reading External Data dialog box.

There are several tabs and many settings you can change.  Have fun.

Kromrey, 1998  “Mean Centering in moderated multiple regression: Much ado about nothing” is also good, if nothing else, it has a great title.  Note that Kromrey overstates it lack of utility in this article.  It has a very important use in interpretive terms on many moderation/interaction models.  What’s important to note is that it doesn’t have the commonly cited effect of removing or reducing the correlation between terms that was so often cited.  In other words, it should be used, but often not for the reasons cited in the past. 

 

Note that its crucially important to use it in multilevel modeling.  For a treatment of this, I’d recommend the books by Singer and Willet “Applied longitudinal Data Analysis” and Byrk and Raudenbush “Hierarchical Linear Modeling”.
